Resort Executive Chef Aishling Stevens and Chef de Cuisine Matt Laurich approach seasonal cooking in a modern and stylish way, with a tangible connection to our surroundings, utilizing fermentation, preservation, foraging, and locally sourced ingredients.
Looking for a few bites and a glass of wine? The new eight-seat Sommelier Table allows you to explore unique wines and the world’s finest ingredients — Miyazaki beef, Mangalitsa lardo, caviar, and so much more. Our sommeliers have chosen wines from emerging regions and small producers to pair with the á la carte menu. Reservations are not required for the Sommelier Table.
Every thoughtful dish at Restaurant Latour and throughout the resort’s restaurants is complemented by countless options from the Crystal Springs Wine Cellar. Built by resort founder and visionary Gene Mulvihill, the collection is lovingly curated by Chief Operating Officer Robby Younes and Wine Director Susanne Wagner. This one-of-a-kind collection includes essentials, rarities, astute selections, and stunning values from around the world and has won Wine Spectator’s Grand Award every year since 2006.
