THE OPEN-FIRE KITCHEN EXPERIENCE
'FIRE IS SUCH A FRAGILE AND BEAUTIFUL THING' — Chef Francis Mallmann
Open fire cooking, is already part of Chefs Garden dining and the NJ Beer & Food Festival. This summer these 2 styles are merging, creating a unique dining experience. This outdoor kitchen will feature 3 main cooking elements — The Porteno, The Infiernillo & The Smoke Box, customized for birds and small game.
The Open-Fire Kitchen will be functioning Saturdays and Sundays until the fire burns out!
During the Garden Tour at 10am on Saturdays, guests can watch the chefs stoking fires, preparing the day’s chickens & vegetables and maybe even taste a thing or two!
‘Wood-fire cooking is roaring back in a big way, and chefs from coast to coast are using this
ancient technique to spark some creative thinking in their kitchens.'

— 6PM & 8PM SEATINGS $65 PER PERSON —
Sunday the experience starts with igniting the fires at 11am to prepare for the family-style feast created with well-prepared local ingredients, served in the Chefs Garden that very night. No TWO feasts will be the same!
First Courses will revolve around the ‘Garden’ as we showcase vegetable dishes, lush greens salads with smoked birds and small game.
The Entrée will speak to the terroir of The Resort combining of locally raised animals — true nose to tail — and amazing hyper-seasonal local produce.
Dessert will be simple. Maybe some hand-picked black cap raspberries, glazed with warm honey, topped with a lavender crème fraiche served with short bread or the perfect stone fruit grilled over hardwood finished with an aged vinegar.
Garden inspired beverage pairings will focus on craft beers, batched cocktails and quality sangrias. Non-alcoholic beverages will include foraged-infused waters.
$65 Including Drinks, Tax & Gratuity (same for all ages)
There will be two communal seatings holding only 10 people each. Reservations must be made in person at the Chefs Garden Host stand. Please keep in mind reservations must be paid in advance, in order to hold your seats.
